Prep and chop all the veggies. First add onions to a hot stock pot, sauté a bit with some of the veggie broth. Add carrots and repeat. Then add garlic, apples and and 3 cups of broth. Reduce heat to simmer and let cook till all ingredients are soft. Stir in coconut milk and Indian spice then remove from heat and let cool a bit so you are not dealing with boiling liquid. Carefully add liquid to blender, in batches to purée all the ingredients, adding vegetable broth or more coconut milk to help bring to desired consistency. After all of it is completely blended return to pot and add peas. Serve immediately.
